Sweet Potato Chili Ginger SoupSweet Potato Chili Ginger
Soup
Ingredients: 2 large sweet potatoes Fresh
Ginger (about 1 cubic inch) Chili powder Ham (as much as you
want) 1 Fresh Chili Salt Pepper Sage
Nutmeg Butter
Directions
First, peel, wash and cube the
sweet potato (1" cubes or smaller) - boil them until soft
While potatoes
are boiling, peel & dice the ginger
Once boiling is done, blend the
potatoes in the blender with the ginger. To do this, I had to actually do it in
3 batches - each time I put some of the sweet potato cubes into the blender,
then added in some of the water I used to boil them, just until the cubes were
covered. Once it was pureed, I put it into a serving bowl.
Transfer the
remaining water from the pot into a second dish (you'll need some of this water
later).
Put the sweet potato puree into the pot, add water from above to
thin it out (to your preference).
Bring it to a boil. While this is going
on, dice your ham into little chuncks (ours are about 1cm cubed). Once it boils,
turn down to a simmer, and:
Add ham chunks into the soup Add 2 tbsp
chili powder Add 3 or 4 leaves of diced Sage Add 1 tsp salt Add 1 tsp
pepper Add 1 diced chili pepper Add 2 tbsp butter Add a bit of nutmeg
(I think I added about 1/2 tsp)
Simmer for several hours - keep adding
water while it reduces.
Serve with fresh bread and scotch
